
Simple Oven-Roasted Maine Fingerling Potatoes
- 16 Maine Fingerling potatoes
- 1/3 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon dried or fresh-chopped parsley
- 1/4 teaspoon paprika
- Wash and dry the potatoes. You may cut them or roast them whole.
- Mix other ingredients in a bowl.
- Add potatoes and toss until coated with mixture.
- Place potatoes in a pan and bake/roast potatoes at 400 degrees for 30 minutes.
Serves 4.
