
Maine Lamb Stew
- 1 pound Maine lamb stew meat
- 1 cup potatoes, diced
- 1 cup celery, diced
- 1 medium onion, diced
- 1 cup carrots, sliced
- 1 cup pasnips, sliced
- 1 bay leaf
- 1 teaspoon thyme
- 2 tablespoons olive oil
- salt and pepper to taste
- 4 cups vegetable stock
- In a saucepan, sear the lamb meat in olive oil.
- Add the vegetable stock and bring to a boil.
- Add seasoning and vegetables.
- Simmer until meat is tender, approximately one hour.
Serves 4.
