
Easy Blaine House Maine Potato Bake
- 4 cups Maine potatoes, diced
- 16 ounces sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup onion, chopped
- 1/2 cup butter
- 1 can cream of chicken soup
- Boil potatoes for five minutes and drain.
- Combine all ingredients and place them in a 9" x 13" pan.
- Bake at 350 degrees for one hour.
Garnish with scallions.
Serves 8.
