
Double Stuffed Baked Maine Russet Potatoes
- 6 medium Maine Russet potatoes
- 4 tablespoons butter
- milk
- salt and pepper to taste
- shredded cheddar cheese
- Wash the potatoes and prick them with a fork.
- Place potatoes in the oven to bake for one hour at 400 degrees.
- Remove from the oven, slit the tops of the potatoes, and scoop out the white.
- Mix potatoes whites in a bowl with butter and add milk to the desired consistency.
- Add salt and pepper to taste.
- Scoop the potato mixture into the potatoes skins, top with shredded cheese, and put them back into the oven to brown.
Serves 6.
